Jacques Faussat, taught by Michel Guérard and Alain Dutournier, recall his origins and his love of the Gers. As a result: white asparagus, quenelle with a morel crème sauce, followed by a crust farm pigeon from Gers, and a meat pie with prunes from the Gascon country, ice cream with prunes and Armagnac, all part of a typical menu of this inventive cuisine.
